...Pulled Pork, Bacon Explosion, Baked Beans, Whiskey Chicken
Big Bob Gibson’s Grand World Championship Pork Shoulder (for 18-20lb shoulder, adjust as needed)
Dry Rub:
- 1/2 c sugar
- 1/2 c paprika
- 1/3 c garlic salt
- 1/3 c kosher salt, finely ground
- 1/4 c packed brown sugar
- 1 Tbls chili powder
- 1 tsp cayenne
- 1 tsp ground black pepper
- 1 tsp dried oregano
- 1 tsp ground cumin
Injection Baste:
- 3/4 c apple juice
- 1/2 c water
- 1/2 c sugar
- 1/4 c kosher salt, finely ground
- 2 Tbls Worcestershire sauce

...Whiskey Chicken Sauce
whiskey chicken sauce from Mike Timko
melt 1 stick butter & 3 T olive oil
add the following:
juice of 1 lemon
5 cloves garlic
1 T oregano
3 shots whiskey
1 t. paprika
salt & pepper to taste
Bring to a boil, then turn off and let cool while you cook the chicken.
Liberally salt the chicken, or chicken parts, and grill.
About 10-20 minutes before it’s done, start brushing on the Whiskey sauce.

...Poultry Brine: A Spicy Variation
- 1 gallon cold water
- 1 T pickling spices
- 3/4 c kosher salt
- 1 t. crushed peppercorns
- 1/2 c white vinegar
- 1 t. ground allspice
- 3 T light brown sugar
- 1 t. granulated garlic (powder)
- 1 T onion powder
- 1 t. dried tarragon leaves
- 1 t. ground chipotle chile
- 1 t. crushed red pepper flakes
- 1 T dried rosemary
- 1 t. dried thyme
- 1/2 t. ground ancho chile pepper
Bring 4 cups of water to simmer, add remaining ingredients, except remaining water, and stir until dissolved. Remove from heat; add remaining water. Cool before use.

...Annatto Chicken
1 lemon, juiced
1/3 brick annatto
1/2 t. olive oil
1 t. cumin
1/8 t. chili powder
salt to taste
Combine above ingredients for marinade
Cut chicken into cubes, place in zip bag, add marinade. Give it a few hours. 2 or more.
Skewer chicken cubes, grill or broil until done.
Serve with Spanish rice, and / or a nice cream cheese dip ( see below )
Cream Cheese Dip for Annatto Chicken
1 8oz cream cheese
1 12oz sour cream
6 scallions, chopped
Combine and serve as dip for chicken skewers
