...Teriyaki Style Grilled Wings
Marilyn’s original recipe for Teriyaki Style wings
Made with Mirin and low sodium soy sauce, these teriyaki style wings rock!
- ¾ cup Mirin
- ¼ cup low sodium soy sauce
- 1 ½ Tbls grated fresh ginger
- 1 lrg clove garlic, minced
- 3 Tbls sugar
Method 1 - simple glaze
- Heat all ingredients in saucepan until reduced by about 1/4. You’re making a thick glaze here.
- Season wings with salt and pepper, grill until almost done.
- Begin brushing glaze onto wings during last few minutes of grilling, turning and brushing until coated and glaze begins to caramelize. Be careful not to burn them - there’s a lot of sugar here.
Method 2 - marinade then glaze
- Double the glaze recipe amounts above
- Heat all ingredients in saucepan - simmer about 10 minutes
- Remove 1 cup and allow to cool for marinade
- Continue to simmer until remaining sauce reduces by 1/4 for glaze.
- Meanwhile, pour cooled sauce into baggie or bowl, and toss wings to coat.
- Marinate wings for at least 1 hour
- Follow Steps 2 and 3 above to grill and finish wings
