Candied Bacon with Whipped Cream
Found this in the NY Times Dining In section.
- Cut a 1lb package of bacon in half
- Fry bacon until crisp - drain on paper towel
- In a clean skillet, melt 1 cup sugar and 3 Tbls. honey in 2 Tbls water
- Cook on medium-high until bubbles subside and syrup turns light amber
- Turn heat to very low and add bacon, turning strips with tongs
- Place strips on oiled cooking sheet or parchment paper until cool
- Serve with whipped cream or creme fraiche
Made as directed above, you’ll get a very thick candy coating on the bacon.
We’re gonna try it with a much thinner syrup to get the bacon just glazed.
